About Akatsuki - Ceremonial Grade Matcha
Discover the flavour, energy and ritual behind this matcha.
Akatsuki means daybreak — the perfect way to begin. A first-harvest Shizuoka ceremonial matcha with rich umami balanced by natural sweetness and a silky texture: bold, and beautifully refined with it. Best enjoyed traditionally whisked with hot water to reveal its full depth, though it holds beautifully in a morning latte too. Naturally high in caffeine — the clean, focused start your day deserves.
Shizuoka is Japan's great tea province, fed by the pure water coming off Mount Fuji, and a first harvest from it is the best the season offers: the delicate early leaf that carries the most umami and the sweetest fragrance. Shade-grown to build chlorophyll and amino acids, then stone-milled, Akatsuki pours a bright, clean grass-green and drinks far rounder than its colour suggests — roasted chestnut and sweet cream over a savoury edamame depth.
To protect its colour, aroma and freshness, Akatsuki is packed in Miron violet glass. This biophotonic glass filters out the visible light that degrades matcha while letting through the UV and infrared frequencies that help preserve it, so the tea stays vivid and nutrient-dense for longer.

Measure 1–2 scoops (about 2g) of matcha with your chashaku and sift into the warm, dry bowl.
-
Water & Whisk
Add 10–20 ml cool water and mix to a paste. Add 70–80 ml hot water (80°C) and whisk in a zig-zag motion until foamy. Enjoy as is for pure matcha.
