An oolong made without air.
Gaba oolong is a modern tea, and a deliberate one. After picking, the leaves are sealed into oxygen-free chambers and left to rest in nitrogen — a process developed in the last century that changes the chemistry of the leaf and, with it, everything about how it tastes. The name comes from a compound the method raises.
What arrives in the cup is unlike any other oolong: a deep amber liquor, thick and almost syrupy, with ripe stone fruit, honey and a warm nuttiness underneath. There's a faint tartness on the finish, like the skin of an apricot.
Rich, mellow, velvety. Holds up to four or five infusions, each one a little rounder than the last.
