Roasted oolong, maple and walnut — a cup for the cold end of the year.
The oolong is roasted until the leaf turns dark and its sweetness caramelises. Against that, maple and walnut: one sugary and resinous, the other buttery with a faint bitterness at the edge. Together they read like something baked rather than brewed.
Smooth, toasty, gently sweet, with a long nutty finish. Good with a splash of milk, though it doesn't need it.
